Typology: still red wine

Vines: Garda Cabernet Sauvignon 50%, Garda Merlot 50%

Production area: Brescia side of Lake Garda

Climate: mild climate typical of lake areas

Soil: limestone and clay

Altitude: 120 m a.s.l.

Production yield: 90 quintals per hectare

Average age of the vines: 15/25 years

Wine-making techniques: tumultuos and malolactic fermentation at 25-30 Celsius degrees. The maceration takes place for about 6 days

Aging: six months in second passage barriques (Allier medium roast)

Ageing: in bottle for two months

Colour: ruby red

Fragrance: berries, a hint of tobacco and spices

Taste: persistent and with a good body

Alcohol content: 13% vol

Interesting fact: the choice of this name is linked to a word of the ancient Rome, Giomelle, which means union of two things, in fact the wine Giomè is the union of two of the major grape varieties in the area of the hinterland of Lake Garda, namely the grapes of Merlot and Cabernet Sauvignon
