Denomination: Bonarda dell’Oltrepo Pavese D.O.C.
Typology: semi-sparkling red wine
Vines: 95% Croatina, 5% Barbera
Production area: Montalto Pavese
Altitude: about 300 m a.s.l.
Wine-making techniques: red vinification with stemming and crushing of the grapes. The must obtained in the presence of skins and seeds, is to ferment in vats at a controlled temperature for 8/10 days. At the end is drained, repeatedly decanted and then filtered and stored in tanks until bottling taking place after the second fermentation in autoclave
Colour: in the glass it is sparkling, ruby red with violet reflections
Fragrance: fragrant, persistent, highlighted hints of cherry and plum
Taste: dry, full-bodied, long lasting aroma
Alcohol content: 13% vol
Interesting fact: it has come to this wine through a careful selection of grapes grown in vineyards located in excellent positions within the company and picked by hand days later than normal at the time of harvest. It is thus obtained a better ripening of the grapes on the screw, with a consequent enrichment sugar content and lower content of acid. This wine has to be drunk young, it is slightly sweet, with a good structure, fine and elegant
Menu combinations: cold cuts, pasta dishes, red meats, braised meats, excellent on medium-aged cheeses
Serving temperature: 16° C. It’s recommended to use Bordeaux Grand Cru glasses. To enhance its features it is recommended to open the bottle at least one hour before drinking
