Denomination: Provincia di Pavia I.G.T.

Typology: semi-sparkling white wine

Vines: 100% Pinot Nero

Production area: Montalto Pavese

Altitude: about 300 m a.s.l.

Wine-making techniques: white vinification with immediate separation of the must from pomace using soft-pressing. The juice is decanted and placed in stainless steel barrels temperature-controlled for the fermentation. At the end we proceed to the racking of the wine, filtration and storage in tanks in which the same remains to refine until bottling. This is done after the second fermentation in autoclave and microfiltration

Colour: looks sparkling, pale yellow color

Fragrance: intense, delicate, fresh floral and fruity with notes of apple and peach

Taste: elegant, harmonious, well-structured equity and long aromatic

Alcohol content: 12,5% vol

Interesting fact: Finigeto produces this wine from grapes selected from old vineyards on high hill placed in a suitable area for Pinot Noir. The yield per hectare is deliberately kept low to produce a well-structured wine with complexity and purity

Menu combinations: appetizers, risotto, omelets and seafood dishes

Serving temperature: 8°/10° C. Serve in Bourgogne Blanc glasses. Uncork the bottle at the moment
