Perche’ San Giacomo?
Via San Giacomo Maggiore a Cognento di Campagnola, era l’indirizzo dove era nata grazie alla cura e alla passione di mamma e papa’ (Carla e Carlo), un’aziendina agricola che faceva contenti gli amici e i parenti per il suo lambrusco e altri prodotti della campagna. Nel granaio di quella casa c’erano gia’ le batterie avviate dai nonni, dato che era usanza comune di queste parti fare un po’ di Balsamico nel proprio sottotetto. Ai loro tempi non si puo’ certo dire che esistesse un unico “modo”, certo e consolidato, per fare il prezioso condimento; ogni famiglia aveva proprie usanze, tecniche e forse vere e proprie ricette personali. Un prodotto talmente affascinante che le batterie sono aumentate nel corso degli anni, e in via San Giacomo Maggiore incominciava a sentirsi l’avvolgente profumo del mosto cotto in autunno e l’inebriante aroma del Balsamico in maturazione durante l’estate. Nel ’94 la naturale successione dell’acetaia, dovuta al venire meno del capofamiglia, il passaggio che permette di continuarne la tradizione. Tradizione, come essenza del Balsamico e come termine che lo contraddistingue da quello industriale, ha un significato profondo: quello di “consegna”, “trasmissione”. E cosi’, dopo alcuni “Corsi per conduttori di Acetaia” presso le varie Consorterie, Confraternite e Consorzi, l’entusiasmo per questo mondo sconosciuto ha preso il sopravvento. Pian piano mi stavo riscoprendo Balsamico. Anno 1997, l’acetaia viene trasferita da via San Giacomo al basso e angusto sottotetto dell’abitazione di Via Verdi a Campagnola Emilia. Anno ’98, il newsgroup it.hobby.cucina, Antonio Tombolini ed Esperya. Dilemma esistenziale: “il tuo Balsamico ci piace, te lo prendiamo, tu pero’ devi farci fattura e questo presuppone aprire partita IVA”. Et voila’ (cioe’, non proprio cosi’ alla leggera) nasce nel 1999 la ditta individuale “Antica Acetaia San Giacomo”. Tra un rincalzo ed un esame, tra una cottura del mosto ed un servizio al Bar Roma arriviamo al 2001, anno della laurea. I clienti crescevano piano piano e c’e’ da dire che con grande coraggio hanno sostenuto questa azienda (???) che spediva il prodotto in cartoni presi il giovedi’ mattina da quelli che avanzavano dal mercato settimanale di Novellara. Per recapitare del Balsamico Tradizionale in cartoni Chiquita, bisogna proprio crederci! Primavera 2001. Chiaccherando con Giacomo (produttore di vino in Valpolicella) scopriamo che possiamo percorrere assieme la stessa strada. Ci riscopriamo Balsamici. Dopo pochi mesi (il primo di luglio) nasce la Balsamica San Giacomo Snc, dedita alla commercializzazione del Balsamico prodotto dall’Antica Acetaia San Giacomo. Le botti aumentano, sia quelle piccole per il Tradizionale che quelle piu’ grandi per il Condimento. Lo spazio pero’ e’ sempre quello. 2003: come si suol dire: “non ci stiamo piu’ dentro”. Il piccolo giro cresce, e fare visite passando per la mia camera da letto incomincia a non essere piu’ divertente e “caratteristico” com’era in principio. Ok, facciamo il passo, spostiamoci in un ambiente unico, che ci rappresenti, con spazi giusti. Vaghiamo tra intermediari e agenzie varie. Niente da fare finche’ parlando con l’amico Luca Montanari, giovane architetto in Novellara, salta fuori una bella opportunita’. La casa con stalla e fienile dei signori Gavioli, in Strada Pennella. E’ messa male ma ha il tetto fatto da poco e gli spazi sembrano quelli che servono. Estate 2004, la San Giacomo Srl (costituita all’uopo nel frattempo) acquista l’immobile.
Ed eccoci ad oggi.
Ora, e’ venuto il tempo di godere in silenzio della cultura, della storia e della magia del Vero Balsamico della Tradizione millenaria. E’ il tempo di riscoprirsi Balsamici.

Why the name “San Giacomo”?
On the street named “San Giacomo Maggiore” in the small town of Cognento of Campagnola, was the address of where it was born thanks to the passion of my mother and my father, Carla and Carlo. With the production of a small farm, between the Lambrusco wine and other fruits and vegetables, it kept family and friends happy. In the top floor of that house there were the first balsamic vinegar barrels already initiated by the grandparents, as it was traditional in this area to have a small production, just for the family consumption. During those times there wasn’t a unique “sure” method to make the Balsmaic Vinegar, each family had its own methods, traditions and techniques, sometimes even personal recepies. A product that was so fascinating that the barrels kept growing in number and in the San Giacomo Maggiore street you could smell the perfume of cooked grape must in the autumn and the magnificent aroma of the Balsamic Vinegar ageing during the summer months. In 1994 was the natural evolution of the acetaia, mainly due to the passing of the head of the family, a passing down the tradition that allowed a continuation of the family belief. “Tradition” is the essence of the Balsamic, not only as a word that distinguishes it from the industrial production but with the deeper meaning of transmitting passing the knowledge. And so it was, after a few courses for “Balsamic producers” taken at the various local institutions, the entusiasm for this new world took me over. Slowly slowly I was becoming a “Balsamic man”. In 1997, the acetaia moved from the San Giacomo street to the small room underneath the roof in the nearby village of Campagnola Emilia. Year 1998, the news group called it.hobby.cucina Antonio Tombolini and Esperya. Here is the dilemma : “we love your Balsamico and we’ll buy it but you have to make an invoice and that means registering your company”. So during 1999 the individual company called “Antica Acetaia San Giacomo” is born. Between refilling the barrels and taking university exams, cooking the grape must and working at the local bar we reach year 2001, the year when I get my law degree. The number of clients was growing and with great courage they believed in this company that was shipping in boxes that were recovered from the local Thursday market. To deliver Traditional Balsamic Vinegar in old bananas card board boxes needs great courage! Spring 2001. Having a chat with Giacomo, a wine producer in the Valpolicella area, we find a possibility to work together. We found ourselves becoming “balsamic men”. After a few months, towards the beginning of July, a new two man company is born: “Balsamica San Giacomo snc”. This company was dedicated to selling the product properly especially the Tradizionale produced from the Antica Acetaia San Giacomo. The barrels keep growing in number, the smaller ones for the Balsamico Tradizionale as well as the larger ones for the “condimento”, the younger version. The production space is still the same. Year 2003. As we say, we don’t fit in there any more. The tiny business is growing. The people visiting the Acetaia are more and more and taking them through my bedroom is not so “characteristic” as it was in the beginning. We rolled our sleeves up, went to the bank and took the big step. We were looking for a place that could represent our production with the right spaces. We went through a number of real estate agencies and intermediaries but nothing came out. Until we talked to a friend, Luca Montanari, young and upcoming architect and he finds an interesting old barn. A house with steeples owned by a local farmer, Mr. Gavioli in the Pennella Street. The buildings were in a decadent state but the roof was good and the spaces were what we needed. Summer 2004. The “San Giacomo s.r.l.” a new limited liability company is born and buys the barn.
Here we are today.
Now it’s the time to enjoy, in silence, the culture, the history and the magic of the real, one thousand year old Traditional Balsamic.
